Fishing for Dolphin (Mahi), what are your favorite methods

I absolutely LOVE fishing for Dolphin and I've had success in the past trolling and using live baits but was wondering what other methods people use for catching Mahi Mahi?

I've heard that once you get in a school of them that once one is hooked, the others will stay around as long as the fish is still in the water. Is this true?

I've seen people on party boats just cast a piece of cut bait with nothing but a hook and a chunk of fish and they have been pretty successful.

Any thoughts?

I have caught blues using that method but not Mahi. I'd like to hear some common methods as well.
